I made these waffles for my son this past weekend... I served them to him with bananas and some maple syrup. No, they were not "paleo" any more, but still super healthy!
He loved them!
I followed the instructions on the back of the bag, with just a few changes:
1) I doubled the recipe and froze the leftover wafflesfor another morning
2) I replaced the coconut oil with grapeseed oil.
3) I sprayed the grill with grapeseed oil as it has a high smoke point of around 420°F, whereas coconut oil has a smoke point of 320°F and is 82% saturated fat, which if very high. Avocado oil would work well also, as it too has a high smoke point.
Preheat the waffle machine to medium high setting
In a bowl, whisk together the mix, the eggs, 1/2 C of water, and 1 tbsp of grapeseed oil
Spray the machine with grapeseed oil
Scoop 1/4 C of the batter into each waffle slot
Cook until done. My machine took about 4 minutes but each machine is different.
Makes 8 waffles. Enjoy!
