My family loves caesar salad, and I do not love cream. So, I make this version of caesar, a take on one of my favourite aunt's caesar salad dressings, and my team is thrilled with it every time!
When I asked my aunt for her recipe, like a true chef, she told me how to make it. "Use some red wine vinegar, some great olive oil, a nice parmesan..."
So while I had all the ingredients, the portion control took me a little while to perfect so that I could share it with you!
Below is my take on her dressing. It is delicious! I hope your gang will enjoy it as much as mine does. I use apple cider vinegar instead of red wine vinegar most of the time, but both options are delicious!
You can make this dressing and store it in your fridge. No need to make all 12 cups of lettuce at once. We just happen to be great big salad lovers!
10 to 12 C Chopped Romaine Lettuce
1/4 C extra virgin olive oil
3 tbsp apple cider vinegar or red wine vinegar
1 clove garlic minced (or more to taste)
2 tbsp dijon
1 tsp fleur de sel
1 C freshly, finely grated parmesan cheese
In a small bowl, whisk the oil, vinegar, garlic and dijon until the dijon is well incorporated into the oil and vinegar
Whisk in the parmesan cheese and fleur de sel
Toss the lettuce with the dressing just before serving. Add any other toppings like bacon or bread crumbs if desired.
