I made this Fra Diavlo last night at Andrew's request... He loved it. And, with this recipe, I made almost NO changes to the original! That is rare for me and a sign that Giada's recipe is aligned with my views on clean eating! In Mediterranean cuisine recipes, there is ordinarily little to nothing that I don't want to use. They are always full of great, healthy oils, which I love to eat and serve my family.
I would only make the one change when I repeat this recipe: I would strain the diced tomatoes to keep more of the diced tomatoes in the sauce and much less juice.
Beware - it was spicy! I loved it like that, but Andrew could have used a touch less spice.
The best part of this meal was that my 11-year-old son edited the video at the bottom of this page. It is a quick 33 seconds that shows precisely what I did to make it! I am a very proud Mama! Hats off to my Lucas!
1 pound peeled and deveined shrimp
1 tsp salt
1 tsp crushed red pepper flakes
3 tbsp olive oil
1 medium onion, sliced
1 14 ounce can diced tomatoes
1 C dry white wine
3 cloves garlic
1/4 tsp dried oregano
3 tbsp chopped fresh parsley
3 tbsp chopped fresh basil leaves
