I don't often cook with beans, but I made these last week and WOW!!! They were amazing!!! They FAR exceeded our expectations!
We LOVED them!!!
There are four steps to this recipe:
1) preheat the oven to 450°F to roast the turmeric cauliflower
2) prepare the refried beans on the stove
3) blitz the tahini cumin lime crema
4) prepare all the extras
Indeed, there are a few steps, but each one is simple and well worth the effort!! I promise. If you like vegetarian meals, and if you like Mexican food, TRY THIS!
1 large head of cauliflower, about 2 pounds
4 medium cloves of garlic
2 tablespoons grapeseed oil
1 tsp ground cumin
1 tsp salt
1 tsp paprika
1/2 tsp crushed red pepper flakes
1/2 tsp black pepper
1/2 tsp ground turmeric
1 small white onion
2 15 ounce (443 ml) cans of black beans
3 tbsp olive oil
1/2 tsp chili powder
1/2 tsp salt
1/4 tsp pepper
1 small clove garlic
1/4 cup lime juice
3 tbsp tahini
1 tbsp olive oil
1 tbsp Mexican Hot sauce
1/2 tsp ground cumin
1/4 tsp kosher salt
Corn tortillas
Diced avocados
Chopped fresh cilantro
Fresh lime wedges
Pepitas
Sliced radishes
